Last of return temp is REALLY annoying. You can't get it via Opentherm either. But the sensor is there because you can see the value in the InComfort app.

I went for Intergas. They play really well with Evohome via Opentherm, and I liked the mechanical simplicity (no diverter valve, for starters - they always seem to fail with Combi boilers).
To a point. But ZigBee kit can be battery powered (for temperature sensors etc.) whereas Wi-Fi will usually need mains power (there are a few exceptions such as Cricket).
And ZigBee can be meshed...
You need to get past thinking about heating radiators up. Rather than applying overrides, adjust your schedule to get your rooms to be comfortable at the times you use them. That's how Evohome work...
If the room wasn't losing heat and it was within 0.2C of setpoint then no thermal input is required.
What were the domoticz measured room temps at the 30m and 60m points? Was it cooling or staying constant?

I have an older Intergas boiler and don't see anything even remotely like this behaviour. Something is very wrong with your setup - it shouldn't be doing that, and it isn't doing that by design.
