loops - yep, our norm for excess cable has generally been to zig-zag rather than wind-up, before banding with a velcro or whatever - no tangles if / when undo, too - so maybe we'll do the same with the Cat-5 ...
cable-trays - IIRC, one option is a tray with a wooden cover that sits in the floor - eg: cast-in when screeding - must check-see if still available ...
