With a planned replacement of my boiler, and a move to opentherm. Is it best to reset EvoHome and let it learn new characteristics or am I ok simply replacing the TPI controller with opentherm and carrying on ?

I would just replace and carry on.
A lot of the learning and adaption is actually done by the individual HR92's so resetting the controller won't reset their adaption anyway.
